  • Drain excess fat: Use a slotted spoon or tilt the skillet to remove any excess grease, leaving just enough for flavor.
  • Add the Rotel: Pour the entire can of Rotel tomatoes (including the liquid) into the skillet with the cooked beef, stirring to combine.
  • Add the cheese: Reduce heat to medium-low and add the cubed Velveeta cheese, stirring constantly for 3-5 minutes until the cheese is completely melted and the dip is smooth and creamy.
  • Simmer gently: Let the dip simmer on low heat for another 2-3 minutes, stirring occasionally, until it reaches your desired consistency and all ingredients are fully incorporated.
