  • 100 g fresh fruit berries, grapes, sliced banana, or diced apple
  • Optional toppings honey drizzle, ground cinnamon, toasted coconut flakes, chocolate chips, or chopped nuts

Instructions

  • Combine the base ingredients: In a medium mixing bowl, whisk together the rolled porridge oats, yoghurt, eggs, and vanilla extract until fully combined and smooth, about 1 to 2 minutes.
  • Fold in fresh fruit: Gently fold your chosen fresh fruit into the batter, being careful not to crush delicate berries, and distribute the fruit evenly throughout.
  • Prepare the baking dish: Lightly grease a small baking dish (about 7 by 5 inches) or line it with parchment paper to prevent sticking.
  • Pour and spread: Transfer the batter into the prepared dish and smooth the top with a spatula so it bakes evenly.
  • Preheat the oven: Set your oven to 350°F (175°C) and allow it to fully preheat for about 5 minutes.
  • Bake: Place the dish in the preheated oven and bake for 25 to 30 minutes until the top is set and lightly golden brown.
  • Cool slightly: Remove from the oven and let the baked oats rest for 5 minutes before slicing, which allows the structure to set.
